Collaborating with Sugar Factory American Brasserie on locations nationwide since 2016, GTM has worked on nearly 30 projects in varying roles – as Architect, Designer and Architect of Record – including several restaurants still under construction or in development.
The first among these openings was their Pentagon City restaurant, which seated 200 and included a candy store, ice cream parlor and café, as well as outdoor seating. The largest – the three-story, 14,000 square foot Las Vegas restaurant – boasts expansive dining room and bar seating, whimsical candy retail store, a candy dot rock climbing wall, an indoor/outdoor 30-seat carousel on the upper level, and an outdoor patio with fire pits overlooking the Las Vegas Strip. Other notable location openings were celebrated in the Dover Downs Casino in Delaware, the Mall of America in Minnesota, and the newly-opened Downtown Detroit restaurant in Michigan, which showcases another Sugar Factory staple – a retail area of over 500 candy options with high gloss white millwork and a white marble transaction counter housing the signature gelato and pastry cases.
While the main design elements remain consistent, featuring the brand’s black, white and red motifs with crystal chandeliers, marble accents, plush velvet booths, VIP rooms and spaces for large parties, there are unique decorative elements with each. Known as “the most Instagrammed restaurant in the United States,” many of these variations are intentionally created to vary its presence so patron photography can help identify the location. Feature areas such as floor to ceiling flower walls with neon signs, pink conversation heart walls, and marquee bulb wrapped TV video walls become standout attractions for guests to spread their Sugar Factory experiences across social media.
